Tortellini Salad Recipe

Last weekend at a BBQ we had this amazing Tortellini Salad and we really wanted to recreate, with our own little twists of course. We were told it was pretty easy - thanks Mary!! It has been sunny around here so we have wanted some easy and light meals for hot days. 

We decided to add some chicken to it to make it more of a main course instead of a side dish/pasta salad. We talked about doing rotisserie chicken, but it was nice out so Justin just wanted to BBQ.  

Here are the Ingredients:
Tortellini - we used half of the big pack from Costco
3/4 Cup Italian Dressing
Cherry Tomatoes - chopped in half
1 Can of Black Olives
1 Bag of Spinach 
3/4 Cup of Shredded Parmesan
Chicken Breast

1. Cook the tortellini based on the instructions on the package. 
2. Drain the tortellini and run cold water over the pasta to cool it down. 
3. Once completely cooled, add all of the other ingredients in and gently mix it up in a big bowl! 

That is it. How easy is that? If the measurements look a little off with whatever you throw in go ahead and add a little more. The measurements are not exact! And it isn't even that horrible for you. Plus you get lots of nutrients from the spinach. We wanted to make a big batch so we could have some for lunches over the week. We will see how well it holds up.

  2. Love this! I love finding new variations of pasta salads - we just tried tortellini as a cold pasta salad for the first time this week too!

  3. One of my very favorite salads to make is with it. I will have to toss in some spinach next time.
