Hobo Dinner

We had the yummiest dinner the other night. I just had to share my mixture with all of you and keep track of it so I remember what I did later :)

Hobo Dinner Packets Recipe

Ingredients (per packet):
·         Half of a Potato
·         1 tbsp Butter
·         Chicken Breast
·         Ranch Dressing
·         Montreal seasoning (or any seasoning you like on chicken)
·         ½ cup Broccoli
·         ¼ cup Cheddar Cheese
·         Bacon Bits
·         Parmesan Cheese

Pull out a piece of foil for each packet. You will want to make sure it is big enough, I made them right about a foot long. If you want to make a big packet you might need a bit more foil. Spray the foil with cooking spray. Chop up the potato into small pieces like country hash browns. The potatoes will go onto the foil first. You will want to salt and pepper to taste. Put a tablespoon of butter on top of the potatoes. Add the chicken breast on top of that. Put 2 lines of Ranch across the chicken to cover the top and then add the Montreal seasoning. Chop up the broccoli into bite size pieces and toss it in. Cover all of it with cheddar cheese.
Wrap the foil up nice and tight so nothing can get out of the packet. Cook it on high on the BBQ for 20 minutes (10 minutes on each side) or until the chicken is completely cooked. Open it up and add some bacon bits on top and enjoy. We also added a little parmesan on ours, but I like parmesan on everything! It was perfect with a piece of corn. Yum!

Also, I looked at a bunch of other recipes and then just added everything I liked to make ours. You can easily mix it up and add whatever you like. It was delicious.
